Café de Paris doesn't need to be discovered. That is not the point. The move is knowing what to order, sitting for long enough to make it count, then leaving before it becomes too much.

Monte-Carlo does the circuit. Nikki Beach does the rest.
Rooftop at the Fairmont, with poolside lunch, music, and Mediterranean views when the day needs to move away from the race for a while. It's not the quiet stop, but it's the right one when the afternoon needs to feel less scheduled.
Go for lunch. Stay if the mood takes you.

Seafood at the end of the pier in Fontvieille.
Oysters, wine, and an outside table if you can get one. Les Perles is the detour when Monte-Carlo starts feeling a little too polished and the day needs to breathe.
Go for seafood. Stay because it feels like a proper pause.
